Yeast-extract and flavour enhancer in wheaty products?
Dear wheaty-friends:
over and over again we get questions with respect to yeast-extract and glutamate. This is an example of a tipical letter and our answer:
„Dear wheaty-company:
I like your vegan dedication / engagement (as I am also vegan).
However, it would be great if you would also consider / respect your
costumers' health and therefore renounce on flavour enhancers. As an
example: Weenies, where glutamate is declared as yeast-extract.
Therefore I will renounce on the wheaty-products in future...
Kind regads X. Y."
Our answer:
Dear Mister Y.:
1. There is synthetic glutamate that is manufactured industrially which is used in barrels in food. Of course we refuse it.
2. There is natural glutamate. Even you contain glutamate. Many groceries contain glutamate. Please look it up on the Internet! Tomatoes, mushrooms, cheese, algae, meat, soja sauce etc.
3. Of course there is also yeast-extract with additionally added glutamate. However, we exclusively use natural yeast-extract which don't contain added glutamate, inosinat or guanylate. During the fermentation of yeast (strictly speaking: autolyse) natural glutamate arises / is produced, just like the production of natural glutamate during the maturation of soya sauce, cheese (especially of Parmesan cheese). The yeast extract used by us contains it, too. And we don't hesitate using yeast extract because of this fact.
4. Well, it is a little bit hard to understand all this. However, if you really want to avoid glutamate strictly, here my tip: Forego also tomatoes, Parmesan cheese, mushrooms, Shoyu, meat, fish etc.
Best regards your
